Authentic Texas Caviar.
 
What is your idea of Authentic Texas Caviar?

There are many ways to do it and I have mine.
This year it will be.
Black eyed peas.
Fresh chopped orange and red sweet peppers little ones not bells.
Two fermented Fresno peppers.
Fresh chopped garlic.
Fresh chopped garlic leaves.
Fresh ground black pepper.
Salt.
Chopped red onion.
Lime juice.
Extra Virgin olive oil.
Dill seeds.
A dollop of mayonnaise.
Chopped green olives.
I dash of sugar to offset the sour taste of the lime.

Mix all of the ingredients up before hand and start cooking the black eyed peas.
When the peas are just done and not mushy remove from heat and rinse with cold water to stop the cooking.
When peas are cold fold into the premixed ingredients.
Let refrigerate over night mix one more time and enjoy.
A picture will be presented of this mess when the peas are done.

Ours is pretty simple -

Black eyed peas
Pea snaps
Bacon
Salt and Pepper
Cumin
Onion
Onion and Garlic powders
Hot Sauce

Baby Back Ribs
Boiled Cabbage
Yellow and Zucchini Squash/Vegetable stir-fry

[LIST][*]1.5 cups frozen corn, reheated in microwave or on the stove-Your choice[*]1/2 cup diced tomatoes & green chilies, mild (Red Gold)[*]12 ounce fresh black eyed peas-cooked[*]1 small onion-diced[*]1 red bell pepper-diced[*]1/4 cup fresh cilantro[*]6 tablespoon red wine vinegar[*]3 tablespoon olive oil[*]1/2 teaspoon black pepper[*]1/2 teaspoon garlic Powder[*]1 teaspoon dried oregano leaves[*]1/5 teaspoons cumin[*]1/4 tsp sea salt[/LIST] [B]Directions[/B]

Mix everything together and refrigerate a few hours or overnight Serve with pita chips or lavash chips for a healthier version or serve with those awesome tostitos scoops. Those scoops are perfect for an hors d'oeuvre plate because you can scoop the dip right into them and place on the plate, perfect one handed pick up for your guests.
