Cooking with orange juice!
 
I llke oranges, but I don't love oranges. I do eat an occasional orange, but not often. I can't remember the last time I bought orange juice or juiced an orange to drink. I recently purchased a small container of orange juice to use in a salad dressing and found that I really like orange juice for drinking. It has made me curious about different ways to use orange juice in meal preparation. Do you have any recipes that feature orange juice as one of the primary ingredients in it's preparation? I was fooling around with it this evening and tried it in the preparation of fried rice. It was delicious. I like rice, but rice is kinda boring in taste. Rice always seems to depend on the flavors added to it for it to move from the boring side to the delicious side. Orange juice moved it very well.

Try using frozen orange juice concentrate. Works wonderful!!

The above is for orange chicken, but it doesn't have you breading the chicken a whole bunch. Not very complicated and you can adjust the ingredients to your taste quite a bit.

The above salad I've made and enjoyed a lot, even using well drained and dried with paper towels beets. I did add really thin pieces of red onion and paper thin slices of radish ( both cut on a mandolin).

I wonder how orange Ceviche would work instead of lemon or lime Ceviche. Might need to use sour orange instead of sweet orange.


I decided to try cooking a cup of rice in orange juice instead of water in my instant pot (just experimenting). It required 1 1/3 cups of orange juice instead of 1 cup of water, but it is delicious. I can see many dishes which are normally served on a bed of rice being enhanced with the orange/rice.

joy of cooking has a recipe for country style ribs in barbecue sauce.
4 lbs country style ribs
1 & 1/2 cups barbecue sauce combined with 1 cup orange juice.

put the ribs in a 9 X 13 baking dish
pour the sauce combo over the ribs, and turn and coat completely.
cover tightly with foil, and cook at 300 for 3 hours
uncover the ribs and raise the temp to 350, and bake for
another hour, turning them once after 30 minutes.
remove ribs to a warm platter, and let stand for 15 minutes
spoon fat off the sauce, and serve the ribs with the sauce.

this is a pretty simple recipe, but i haven't been able to master it.
i tried cooking it once hotter, and quicker due to time constraints, and it
came out over done, way over done like with a charcoal exterior.
i tried it a second time, and something else not good happened.
i am a decent cook, so i am not giving up.

if you try this recipe, do it when you have plenty of time. don't rush it,
and pay attention to oven temperature. it will taste great.

We ate Sunday lunch at a friends house. She cooked the ribs as you described, but in a slow cooker instead of the oven. She prepared the ribs with the sauce in the cooker and turned it on as they left the house early on Sunday morning. When we arrived at her family home about 12:30 p.m., the ribs were falling off the bone delicious. She had also placed fresh vegetables in the oven to bake and set the timer on the oven so the vegetables had finished cooking perfectly when we were ready to eat. A few frozen but thawed "heat and serve" rolls made the meal perfect.

The only time I have been inebriated many, many years ago was due to my love for Tequila Sunrise drinks. I just couldn't stop drinking them.

Another mixed drink with orange juice is called a Tootsie Roll because it tastes as the name says, but they sure can get one drunk fast, too. It's nothing but some Kahlua and orange juice ( good quality, may even be frozen concentrate) in a Tall Tom Collins glass with ice. Good but wicked, LOL.

I used to make a yearly fishing trip with some friends. We would stay in a large lodge for a week and fish all day, play cards in the evening and tell a lot of lies to each other. One evening. one guy wanted some Crown Royal; so he drove into town for it. When he returned, he had bought a bottle of Kahlua for me. I sat there drinking Kahlua in coffee all evening. I never felt slightly drunk and wasn't even sure it had alcohol in it. I haven't had any or even thought about it in many years. It was very good.

Kahlue IS good! Try it sometime with finely crushed ice and just pour the Kahlue over the ice in a glass; sort of a frappe. Or over really good vanilla ice cream.
