After Cutting

After cutting potatoes should I let them rest for a couple of days before planting?

Yes they should heal over or dry out some where they are cut before planting out.
This helps prevent disease/rot entering the fresh cut.

A few days I guess it depends on how dry it is, maybe 2 to 5 days.
