Freezing peppers?
Can you freeze jalapenos whole?

Yes you can just blanch them first.
Of course you can only cook with them after you do or maybe a salsa. Worth |
I actually had good luck freezing them whole without blanching. Even after two years in the freezer they were holding out well in terms of flavor, but as Worth said, they will be best used for cooking.

Some where some place I lost a lot of smoked roasted hatch chillies in one of my freezers.
I have no idea where they went but they aren't there now.:( Worth |

I wonder if after freezing peppers they would be ok for pepper jelly. I would think so...

Frozen peppers (unblanched) are great for cooking or even in a raw dish if it can take some extra liquid and you dice em small. Chop them up as soon as they come out of the freezer and add them to your dish before they turn to mush and juice. 8-)

I have done a comparison freezing test: (1) Blanched (2) Not Blanched.
I have found out that blanched ones have better texture when thawed. |
