making up some aji Amarillo powder today! smells good!---tom

Looks good.
Is this from the small pepper or the big one I see from Peru in stores here? Worth |
larger ones 6 inch + got the seeds from Fred, maybe should of planted them sooner, cold weather came, got about a dozen that turned orange, the rest stayed green, quite a few green ones, and tons of blossoms left, probably do better in longer growing season---tom

from Fred Hempel worth.

Your experience is the same as ours. We typically germinate in early Feb,
transplant to the field in May and in late October the plants still have lots of peppers. I think we got about 3-5 lbs per plant total this year, and there are probably 1-2 lbs left on the average plant. They produce well, but they ripen after most all of our other peppers have ripened peppers. That is one advantage of the small Aji Amarillo -- You can get ripe peppers sooner in shorter growing seasons. Very interesting. Are the peppers they are selling from Peru? Or somewhere else? I am surprised you can find them in stores.

Your powder looks great! How are you drying your peppers?

Yes in cans and jars from Peru the big ones. Worth |
For a moment I thought they were selling them fresh.
Cans and Jars makes sense.
Yes in cans and jars from Peru the big ones. Worth
|
i slice them then put them in a dehydrator, when dry and hard i put them in a krups coffee grinder until it gets as fine as i want it----tom
For a moment I thought they were selling them fresh.
Cans and Jars makes sense.
Yes they are canned fresh not pickled. Very tasty too, but pricey. You can get rocoto peppers the same way. But they sell manzano fresh from Mexico. Worth |
blade type, works really well too, pretty fine powder----tom
|
Both my blade grinder and burr mill are now pepper grinders.
I took the burr mill apart and added paper shims to one of the burrs and got it to within about .003 of the other burr on the fine setting. Worth |

Mine are Cuisinart here is the blade type I have had for many years.

I'm growing the babyAjiAmarillo. What a harvest starting late June
and fruit all summer, though sensitive to colder temps, I brought it inside, it lost most of its leaves, pruned it back, and getting new growth and more harvest now. Not enough for powder as I've been freezing what I've not used but such a great plant for my 'pepper challenged' climate. Looks really good! (I started my peppers way early and clipped any leggy top growth) |
i think i used about 8 peppers and got 2 of those 1 oz. plastic shaker bottles full, just did a pint jar full of dried maglia rosa, sunrise bumblebee, and blush, some where around 3-4 oz. of powder, computer won't let me download, for some reason, says i have to format h drive, i'll wait til son comes over at noon so i don't delete everything! lol
