French tarragon
 
Does not grow well on the humid and hot Texas Gulf Coast. I use Mexican Mint Marigold as a substitute. You can always find it in the nurseries here as a substitute for the tarragon.

Mexican Mint Marigold's Latin name is Tangetes Lucida...(close enough spelling for google)
